You can always spot a fellow Westieo. A sly, distant smirk, a tightness around the eyes and an utter disdain for anyone born after 1990. Chris from Saccharomyces has been a strong ally since we began. His love of clean flavour and exasperation of lactose have harmonised nicely with our sensibilities.
For us oldies there is something special about Westies. The citrus and pine aroma, the dryness, the mouth coating resin, and a lingering, clean bitterness. Using a touch of biscuit and caramel malts to provide that classic IPA malt structure we layered Simcoe, Citra, Columbus and Chinook over top. And even added a smidge of Sabro, just to annoy the neckbeards. A real, Old, new world, late 90s but not early 20s, classic modern best Coast IPA.
