
Catch Me If You Can - Wild Golden Sour
Yep, we love mixed culture ferments. Like, a lot. It’s science exploded by art; an amalgamation of patience, biochemistry, hard-work, fastidiousness and prescience.
Utilising complex malts with aged whole cone hops, we created the perfect environment for good beer microbes to flourish. A clean primary ferment in stainless was followed by a secondary in Tempranillo barrels. These local barrels still had a touch of wine in them.
After 12 months we felt the beer complexity was a perfect meld of sour, funk, oak, berries and earthy spice. It’s so complex but also drinkable. We couldn’t be happier with our first attempt, hitting all the flavours we wanted.
