Hive - Sparkling Mead

We wanted to produce a product that is super dry, carbohydrate free but tasty, and based on our ethos of exploration and beer science. We inoculated honey from the hive on our rooftop, with waxy comb, rich in fermentative microorganisms. After a few attempts, we found a culture that fermented completely dry and was super tasty.

Subtle esters of apple and pear are on the nose. Floral flavours keep it super smashable, light and delicate. At 5%, its clean and drinkable. A seltzer for non-seltzer drinkers, a carbo free beer for those inclined, or just a super well made, completely wild mead using ingredients from our very own brewery.
