Trial Run - NZ Pilsner
Our first take on a lager had to achieve two things. First, it had to be done properly as we're all about the history of beer styles. Secondly, it had to have a modern take, because we love flavour and doing things a little differently. So we settled on a NZ Pilsner. Properly made, with low modified malt, chloride dominant water, cool fermented and lagered for 3 months. The modern take saw us use Wai-iti, Rakau, Nectaron and Riwaka both late in the kettle and as a dry hop.
The result is a well-structured, clean palate, that lets the subtleties of the NZ varietals shine. A good hit of herbal spice, lime citrus, a bit of dankness and some gooseberry are prevalent on the nose. The flavour is clean and tight, with those white stone fruit and citrus flavours well integrated into the malty sweetness and clean pepper finish.
