Often they are fruited or lifted by the addition of spices like vanilla or galangal 😉. Fruit additions tend to be tropical to accentuate the hop profile or tart to balance the slickly sweet mid palate. The goal is to balance intense hop additions with the lactose and fruit.
We are in the middle of making our first Milkshake IPA, choosing Lime for balance and nostalgia. And yes, we have been smashing our local grocers for their contingent of Lime Breakas on the weekly. Holding back on the lactose to a paltry 5% we also boosted the body with Malted and Rolled Oats and Wheat. BUs are decent, around 50 to achieve that balance.
Hop selection was pretty straightforward. Using Cashmere and Motueka in the Whirlpool, a Dip Hop with Citra and then DDH with that same combo, we just wanted to pull out as much Lime as we could.
Progressing along nicely, it’ll be available in a special crazy beer pack we are putting together for June.
