Quadrupling down to get the most thiol loaded hazy we can manage, we’ve partnered with the boffins at FreestyleHops to go full beer geek. Kicking off with Undermodified Pilsner malt from Voyager. With less modification comes more bound thiols, the precursors to thiol flavour. Next comes Sauvignon Blanc juice. Rich in 3MH (grapefruit), 3MHA (passionfruit) and 4MMP (gooseberry). Up comes Nelson Sauvin and Mega Motueka in the mash. At this temperature the mash proteases unlock the 4MMP and 3S4MP from the Nelson and Mega Motueka, which is a red wine musk infused version of Motueka. Extremely rich in thiols. The Manilita and Waimea add rich NZ hop aromatics. Fermentation sees a strong dry hop hit at high krausen, where the yeast activity brings biotransformation with alacrity. Here, more Mega Mot, Nelson and Manilita shine, releasing thiols in abundance. A cold dry hop adds to the overall intensity and brings those unique NZ aromatic to the fore.
It’s a big old complex juice bomb. Unmistakably kiwi with an overload of passionfruit, blackcurrant, grapefruit, gooseberry and diesel. Super charged aromatics over a soft and pillowy body. Land of the long white cloud indeed, it’s soft and gentle, with the hop flavours on show. A joy to develop something that really pushes a hop element as far as it can go, with our mates at Freestyle.
