Long Goodbye - Gimlet Sour

Inspired by the classic cocktail, this lime juice kettle sour was infused with juniper berries and orange zest. The lactose adds balance to the citric sourness, with fresh lime juice dominating. Juniper berries were macerated in neutral spirit for 7 days, before being infused with some orange zest and dosed into the final product.

Lime and botanicals on the nose, with a lime cordial and red berry mid palate and salty sour finish. All the flavours in balance, leading to a refreshing experience tailored to these long summer arvos.
