Blue Hawaii - Mai Tai Sour

Cocktail inspired beers are an exercise in organised chaos. Orange and Tahitian lime provide bright citrus aromatics, while almond, molasses and bitters converge to recreate the unmistakable profile of a classic Mai Tai.

A restrained sourness preserves the citrus without overwhelming the more delicate bittersweet interplay, allowing the cocktail to remain immediately recognisable. Fortunately, the tiny umbrella contributes very little to flavour.
